Olá,

Terminando a configuração da minha loja, fou par ao passo a passo aqui do site para configurar a URL amigável e notei que meu Opencart não tem o htaccess.txt e muito menos o .htaccess

O que devo fazer?

Opa, o oc vem sim com htacess. Não sei aonde vc baixou, mas por padrão ele está na raiz da loja como .htacess.txt.
Segue o código da versão 1.5.4.1:

O seu OS só pode estar escondendo o arquivo pois acabei de baixar da página oficial a versão 1.5.2.1 e veio o htacess normal.
Segue o código dele:

Se está dando erro 500 verifique se o arquivo está com o nome exato: .htaccess e se o servidor dá suporte a todos os módulos necessários, como o apache mod_rewrite.

Provavelmente o seu Sistema operacional está escondendo o arquivo. Se não me engane, todos os sistemas baseados em Unix fazem isto com arquivos que começam com um ponto, isto inclui os macs.
Configure o seu OS para visualizar arquivos ocultos que deve resolver.
Mesmo assim, segue o conteúdo do htacess do 1.5.5.1:
